Ice cream is a frozen, usually sweet dessert. A delicacy representing an ice-shaped substance is used more for fun than for food. Ice-cream is usually made from milk, cream, oil, sugar with the addition of flavoring and aromatic substances. Ice-cream can also be made from fruits (juice-based and from the pulp of fruit and berries) and such ice cream is called “sorbet” or soy ice-cream (soy-milk based). Various types of ice-creams are available, for example Crème Brulee and full-cream ice (Glace Plombieres). Ice-cream is a high calorie product and some ice-creams contain up to 20% fat and up to 20% carbohydrates. Ice-cream is divided into chilled and soft; soft ice-cream is usually sold by weight since it has a short storage period. Various ice-cream packing variants exist - wafer, paper and plastic glasses, Eskimo (stick ice-cream), wafer horns, rolls, blocks, cakes, etc. Ice-creams put-on sale in cafes, restaurants, etc, are often decorated with slices of fruit and berries, chocolate, wafers, dressed with syrup or chocolate or nut crumbs are sprinkled on them. Milk shakes are also prepared from ice-cream by adding milk and syrup and shaking the obtained mixture in a mixer. Types of ice-creams: * High-fat ice cream (milk - cream based); * Sorbet (a soft ice cream on fruits - berries, juice-based); * Fruit ice (a relatively hard ice-cream stick on a juice-base, usually without milk); Interestingly, the English word “ice cream” belongs only to the first type. The recipe appeared in the travel books of Marco Polo in the very beginning of 14th century. Some say that the recipe of the exotic ice dessert was particularly brought by him from China. At first, ice was stored in special closed places and served on a table only for royal families and Popes. Gradually the manufacture of ice became cheaper. The creation of the first present day ice cream known to us, with the addition of milk, sugar, chocolate, vanilla etc is attributed to the Paris cafe Tortoni at the end of 18th century. But frozen milk is an indigenous Russian dish. Manufacture: Before the invention of modern freezing methods, ice-cream was a luxurious delicacy only for special occasions. The manufacture of ice cream was difficult. Now, ice-cream is manufactured with the use of automatic freezers, where the output should range from 1 to 15 kg per hour. The manufacture of larger volumes of ice-cream is possible in ice-manufacturing plants.
